Ashlar and Domaine de la Cendrillon present a single-seating winemaker dinner. Hubert Joyeux — winemaker and steward of a 17th-century organic estate in the Corbières region of Languedoc — makes his first visit to Ottawa to walk you through six pairings himself.

Menu crafted by Chef Josh Gillard of Ashlar. Family-style seating at a shared table. One evening. Six courses. Six wines. Thirty guests.

01. FIGARO · Nuance — White Blend, Vin de France
Glengarry surface-ripened soft cheese, pine nuts, crispy pancetta, poached pear, warm baguette

02. HAMACHI CRUDO · Minuit — Rosé, Corbières
Sashimi-grade hamachi, citrus olive oil, crushed pistachio, honey & rice vinegar gastrique, cilantro, sea salt, zest

03. DUCK PROSCIUTTO · Les Vieilles Pierres Blanc — White, Pays d'Oc
House-cured duck breast, torched truffle chèvre, chive-arugula-walnut pesto oil, crispy leeks, parmesan

04. VENISON TARTARE · Essentielle — Red, Corbières
Québec venison, Café de Paris aïoli, 64° yolk, amaretto drunken cherries, hazelnut dust, Lankaaster aged gouda, greens, crostini

05. SHORT RIB · La Coume — Red, Single Parcel, Corbières
Wood-fired braised short rib, cassis & braising liquid demi-glace, smoked oyster mushrooms, aged cheddar spätzle, brown butter panko, scallion

06. DESSERT · Ice Wine

How It Works

Reserve your seat with a $50 deposit per guest. Your deposit is applied in full toward your final bill at the end of the evening. The remaining $109 per guest (plus tax and gratuity) is settled at the table.
